Payusnaya sturgeon caviar is nowadays very rare delicacy of Russian caviar tradition. Its made from the sturgeon roe by wet saltage and pressing. With this method the taste more intensive and consistence very viscosity as you can see it on the photo. Often Russian people prefer it more than regular grained caviar. You will need a butter knife to serve it. However as up from refrigerator the consistence is more strong, but in 10-15 minutes it start to be less stark and more viscosity (similar to a butter).
